    Prepare the Filet Mignon

    Take the 6 oz. filet mignon and pat it dry with paper towels. This will help achieve a good sear.

    Season the Steak

    Sprinkle salt and black pepper evenly on both sides of the filet mignon to season it well.

    Wrap in Bacon

    Take the two slices of smoked bacon and wrap them around the filet mignon, securing the ends with toothpicks if necessary.

Cooking

    Preheat the Pan

    Heat a skillet over medium-high heat and add olive oil. Allow the oil to heat until it shimmers but doesn't smoke.

    Sear the Filet Mignon

    Place the wrapped filet mignon in the skillet and sear for 2-3 minutes on each side, or until the bacon is crispy and browned.

    Finish Cooking

    Reduce the heat to medium and continue cooking the filet mignon for an additional 5-7 minutes for medium-rare, or until desired doneness is reached.
