Coat the Cheese Sticks
Take each mozzarella stick and first coat it in flour, shaking off any excess. Then dip it into the beaten eggs, and finally roll it in the breadcrumb mixture. Ensure each stick is well-coated.

Chill the Coated Sticks
Place the coated mozzarella sticks on a baking sheet lined with parchment paper and freeze for at least 30 minutes to help the coating adhere during frying.

Fry the Mozzarella Sticks
Carefully add the frozen mozzarella sticks to the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
For the Marinara Sauce

Sauté the Garlic
In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add the Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring the sauce to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally. Adjust seasoning to taste.

Serve the Sauce
Remove from heat and transfer the marinara sauce to a serving bowl. Serve warm with the mozzarella sticks.
