In a bowl, combine the buttermilk, hot sauce, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour or overnight for best results.
Breading the Chicken

Prepare Breading Mixture
In a large bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Bread the Chicken
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the breading mixture, ensuring an even coat. Set aside on a wire rack to rest for 10 minutes, allowing the breading to adhere.
Frying the Chicken

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the breaded chicken thighs to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 5-7 minutes on each side or until golden brown and cooked through. Remove chicken and place on a paper towel-lined plate to drain excess oil.

Spread a generous amount of mayonnaise on the top and bottom of each burger bun. Place a piece of fried chicken on the bottom bun, followed by a handful of romaine lettuce, sliced pickles, and sliced tomatoes. Top with the other half of the bun.
