Pie Crust Preparation

Make the Dough
In a large mixing bowl, combine the flour, granulated sugar, and salt. Add the cold butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add the ice water to the mixture, one tablespoon at a time, mixing gently until the dough holds together. Do not overmix.

Chill the Dough
Divide the dough into two equal parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apples
In a large mixing bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch until well combined.
Assembling the Pie

Roll Out the Dough
On a floured surface, roll out one disk of dough into a 12-inch circle. Place it into a 9-inch pie dish, pressing it gently into the sides.

Add the Filling
Pour the apple filling into the pie crust, spreading it evenly.

Dot with Butter
Dot the top of the filling with small pieces of butter.

Roll Out the Top Crust
Roll out the second disk of dough and place it over the filling. Trim and crimp the edges to seal.

Cut Vent Holes
Cut several small slits in the top crust to allow steam to escape.

Baking the Pie

Preheat the Oven
Preheat your oven to 425°F (220°C).

Bake the Pie
Bake the pie in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for 35-40 minutes, or until the apples are soft and the crust is golden brown.

Cool the Pie
Remove the pie from the oven and let it cool for at least 2 hours before slicing.
Serving

Slice the pie and serve warm with scoops of vanilla ice cream on the side.
