Method

Preparing the Seabream

    Clean and Prepare the Fish

    Rinse the whole seabream under cold water and pat dry with paper towels. Make sure to remove any scales if necessary.

    Season the Fish

    Drizzle the seabream with 4 tablespoons of olive oil, then season inside and out with sea salt and black pepper. Squeeze the juice of half the lemon over the fish.

Making the Basil Pistou

    Blend the Ingredients

    In a food processor, combine the fresh basil leaves, garlic cloves, pine nuts, and grated Parmesan cheese. Pulse until finely chopped.

    Add Olive Oil

    With the processor running, slowly drizzle in 6 tablespoons of olive oil until the mixture is smooth. Season with 1 teaspoon of sea salt and blend to combine.

Grilling the Fish

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Marinate the Fish

    Spread the basil pistou generously on both sides of the seabream. Allow it to marinate for about 15 minutes at room temperature.

    Grill the Fish

    Place the seabream directly on the grill. Grill for about 6-8 minutes on each side, or until the fish flakes easily with a fork.

Serving

    Serve the Fish

    Once cooked, remove the seabream from the grill and let it rest for a few minutes. Serve with the remaining lemon halves and extra basil pistou on the side.
