Preparing the Fries

Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

Soaking the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Drying the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel to remove excess moisture.

Heating the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Carefully add the dried fries to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

Once cooked, remove the fries from the oil and drain them on paper towels. Immediately season with sea salt while they are still hot.

Grating the Cheese
While the fries are draining, grate the Parmigiano Reggiano cheese using a fine grater.

Finely chop the fresh chives and set aside.

Place the hot fries in a serving bowl. Drizzle with truffle oil, then sprinkle the grated Parmigiano Reggiano and chopped chives on top.
