Prepare the Papaya
Peel and seed the fresh papaya. Cut it into small cubes and measure out 1 cup.

Combine Ingredients
In a cocktail shaker, add the 1 cup of cubed papaya, 2 oz of 818 Reposado Tequila, and 1 tsp of sesame oil.

Muddle the Mixture
Using a muddler or the back of a spoon, gently muddle the papaya with the tequila and sesame oil until the mixture is well combined and the papaya is slightly broken down.

Add Bitters
Add 3 dashes of coriander bitters to the shaker and give it a gentle stir to incorporate the bitters.

Shake the Cocktail
Fill the shaker with ice and shake vigorously for about 15 seconds to chill the mixture.

Strain the mixture into a chilled cocktail glass, ensuring to leave the pulp behind.

Garnish the drink with a wedge of papaya on the rim and sprinkle 1 tsp of toasted sesame seeds on top for added texture and flavor.
