Caviar and Condiments Preparation

Prepare the Condiments
Place the chopped red onion, chopped fresh dill, and crème fraîche into small serving dishes. Set aside.

Prepare the Lemon
Cut the lemons into wedges and arrange them on a plate.
Blini Preparation

Make the Batter
In a mixing bowl, combine the all-purpose flour, buckwheat flour, salt, and sugar. In another bowl, whisk the eggs with the milk until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.

Cook the Blini
Melt 25g of unsalted butter in a non-stick skillet over medium heat. Pour a small amount of batter (about 2 tablespoons) into the skillet to form a blini. Cook for about 1-2 minutes until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter, adding more butter to the skillet as needed.

Serve the Blini
Stack the cooked blini on a warm plate, cover with a kitchen towel to keep warm until ready to serve.

On a serving platter, arrange the blini, Royal Kaluga caviar, condiments, and lemon wedges. Serve immediately.
