Cooking the Pasta

Boil the Water
In a large pot, bring 4 liters of water to a rolling boil. Add 1 tablespoon of salt to the water.

Cook the Linguini
Once the water is boiling, add 200 grams of linguini. Cook according to the package instructions until al dente, usually about 8-9 minutes.

Drain the Pasta
Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the linguini in a colander.
Making the Sauce

Prepare the Sauce
In a large mixing bowl, combine 2 tablespoons of black truffle oil and 50 grams of grated Parmigiano Reggiano.

Combine Pasta and Sauce
Add the drained linguini to the mixing bowl with the sauce. Toss well to coat the pasta evenly, adding reserved pasta water a little at a time if necessary to reach desired consistency.

Garnish
Finely chop 2 tablespoons of chives and add to the pasta. Use a truffle slicer or a sharp knife to shave 10 grams of fresh black truffle over the top. Serve immediately.
