Preparing Artichokes

Clean the Artichokes
Trim the stems of the globe artichokes and remove any tough outer leaves. Cut the top third off each artichoke to expose the inner leaves.

Prepare Lemon Water
In a large bowl, fill with water and add the juice of one lemon to prevent the artichokes from browning.

Boil the Artichokes
Place the cleaned artichokes in the lemon water for about 10 minutes, then drain and pat dry.

Making Mint-Basil Gremolata

Chop the Herbs
Finely chop the fresh mint and basil leaves.

Mince the Garlic
Peel and mince the garlic cloves.

Combine Ingredients
In a bowl, combine the chopped mint, basil, minced garlic, lemon zest, salt, and pepper. Mix well.
Preparing Lemon Gel

Heat Mixture
Heat over medium heat, stirring continuously until the sugar and agar-agar dissolve completely.

Set the Gel
Remove from heat and pour the mixture into a shallow dish. Let it cool at room temperature until set, about 30 minutes.

Cut the Gel
Once set, cut the lemon gel into cubes to serve with the grilled artichokes.
