Preparation

    Prepare the Shrimp

    Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are deveined and shells are removed, leaving the tails intact.

    Marinate the Shrimp

    In a large bowl, combine the shrimp with the extra virgin olive oil, Espelette pepper, and salt. Toss until all the shrimp are evenly coated. Let it marinate for at least 30 minutes to allow the flavors to meld.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals until they are glowing and covered in white ash.

    Grill the Shrimp

    Once the grill is hot, place the marinated shrimp on the grill grates. Grill for about 2-3 minutes on each side, or until the shrimp turn pink and opaque, being careful not to overcook.

Serving

    Plate the Dish

    Remove the shrimp from the grill and arrange them on a serving platter. Squeeze fresh lemon juice over the shrimp and sprinkle with chopped parsley for garnish.

    Serve the gambas a la brasa immediately with additional lemon wedges on the side for guests to squeeze over the shrimp.
