Method

Burger Preparation

  1. 1

    Prepare Salmon Mixture

In a large mixing bowl, combine the minced salmon fillet, bread crumbs, egg, chopped dill, minced garlic, lemon zest, salt, and black pepper. Mix until well combined.

  2. 2

    Form Patties

Divide the salmon mixture into four equal portions and shape them into patties, about 1 inch thick.

  3. 3

    Cook Patties

Heat olive oil in a skillet over medium heat. Cook the salmon patties for about 4-5 minutes on each side, or until golden brown and cooked through.

Sauce Preparation

  1. 4

    Make Sauce Tartare

In a small bowl, combine mayonnaise, chopped capers, pickles, lemon juice, salt, and black pepper. Mix well and set aside.

French Fries Preparation

  1. 5

    Prepare Potatoes

Cut the potatoes into fry shapes. Soak in water for about 30 minutes to remove excess starch, then drain and pat dry.

  2. 6

    Cook Fries

Toss the cut potatoes with olive oil, salt, and black pepper. Bake in a preheated oven at 220°C (425°F) for about 25-30 minutes, flipping halfway through, until crispy and golden.

Assembly

  1. 7

    Assemble the Burger

Toast the brioche buns lightly. Place a salmon patty on the bottom half of each bun, top with baby arugula, a generous spoonful of sauce tartare, and cover with the top half of the bun.

  2. 8

    Serve

Serve the Farie Island Salmon Burgers with a side of hot, crispy French fries.
