Preparation of the Dover Sole

Clean the Fish
Begin by thoroughly cleaning the whole Dover sole under cold running water. Pat it dry with paper towels.

Season the Fish
Sprinkle salt and black pepper evenly over both sides of the fish.

Prepare the Lemon
Cut the lemon in half. Squeeze the juice from one half over the fish and reserve the other half for serving.

Chop the Parsley
Finely chop the fresh parsley and set aside for garnish.
Cooking the Dover Sole

Heat the Pan
In a large skillet, heat olive oil and butter over medium-high heat until the butter is melted and begins to foam.

Cook the Fish
Carefully place the Dover sole in the skillet. Cook for about 4-5 minutes on one side until golden brown, then gently flip it over and cook for an additional 4-5 minutes on the other side.

Check for Doneness
The fish is done when it is opaque and flakes easily with a fork.

Serve
Transfer the cooked Dover sole to a serving platter, garnish with chopped parsley, and serve with lemon wedges on the side.
