Mushroom Tempura

Prepare the batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually add ice-cold water while whisking until smooth. The batter should be light and slightly thick.

Heat the oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Coat and fry mushrooms
Dip the enoki mushrooms into the batter, allowing excess to drip off, and carefully place them into the hot oil. Fry in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the broccolini
Rinse the broccolini under cold water and trim the ends. Pat dry with a towel.

Prepare the herbs
Finely chop the fresh coriander and mint leaves. Mix together in a small bowl.
