Method

Pizza Dough

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until frothy.

    Mix Ingredients

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for 1-2 hours, until doubled in size.

San Marzano Tomato Coulis

    Prepare Coulis

    In a saucepan over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, but not browned.

    Add Tomatoes

    Add the San Marzano tomatoes, salt, black pepper, and oregano. Stir to combine.

    Simmer

    Let the mixture simmer for about 20 minutes, stirring occasionally, until it thickens slightly.

    Blend

    Remove from heat and use an immersion blender to puree the sauce until smooth. Set aside.

Assemble and Bake

    Preheat Oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

    Shape Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide into two equal parts and shape each into a pizza crust.

    Add Sauce and Toppings

    Spread a generous layer of San Marzano tomato coulis on each pizza crust. Tear the burrata cheese and distribute it evenly on top. Add fresh Genovese basil leaves.

    Drizzle with Garlic Confit Oil

    Drizzle garlic confit oil over the top of the pizzas for added flavor.

    Bake Pizza

    Transfer the pizzas to the oven (or onto the pizza stone) and bake for 12-15 minutes, until the crust is golden brown and crispy.

    Serve

    Remove from the oven, let cool for a minute, slice, and serve hot.
