Crudo Preparation

Prepare the Tuna
Using a sharp knife, slice the Bluefin tuna into thin, bite-sized pieces. Arrange them elegantly on a chilled plate.

Season the Tuna
Sprinkle the sliced tuna with sea salt, and drizzle with olive oil. Place fresh basil leaves on top and finish with a dusting of Espelette pepper.

Make the Lemon Gel
In a small saucepan, combine fresh lemon juice and sugar. Heat over medium heat until the sugar dissolves. Once dissolved, sprinkle in the agar-agar powder while whisking continuously.

Set the Gel
Bring the mixture to a boil, then remove from heat. Pour the mixture into a shallow dish and refrigerate for at least 30 minutes until set.

Blend the Gel
Once set, blend the gel in a blender until smooth. Strain through a fine sieve to achieve a silky texture.
Plate and Serve

Assemble the Dish
Spoon the lemon gel around the arranged tuna on the plate. Garnish with fresh orange zest on top for a pop of color and flavor.
