Cooking Pasta

Prepare the Water
In a large pot, bring salted water to a boil over high heat.

Cook the Linguini
Once the water is boiling, add the linguini and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain the Pasta
Reserve 1 cup of the pasta water, then drain the linguini in a colander.
Making the Sauce

Melt the Butter
In a large skillet over medium heat, melt the butter until it starts to foam.

Add Cream and Cheese
Pour in the heavy cream and add the grated Parmigiano Reggiano. Stir well until the cheese melts and the sauce thickens slightly.

Incorporate Pasta
Add the drained linguini to the skillet, tossing to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Finish with Truffle and Pepper
Remove the skillet from heat, fold in the shaved black truffle, and season with freshly ground black pepper to taste.

Plate the pasta and garnish with chopped chives. Optionally, add more shaved black truffle on top for presentation.
