Prepare Phyllo Dough

Thaw Phyllo Dough
Remove the phyllo dough from the freezer and allow it to thaw in the refrigerator for several hours or overnight.

Preheat Oven
Preheat your oven to 350°F (175°C).

Melt Butter
In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.
Make Nut Filling

Combine Nuts
In a large mixing bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well to combine.
Assemble Baklava

Add Nut Filling
Spread a portion of the nut mixture (about 1/4 of the mixture) evenly over the phyllo layers.

Continue Layering
Continue layering phyllo dough, brushing each sheet with butter, for another 4 sheets. Add another 1/4 of the nut mixture and repeat until all nuts are used, finishing with 8 layers of phyllo on top.

Cut Baklava
Using a sharp knife, cut the baklava into diamond or square shapes. Make sure to cut through all layers.
Bake Baklava

Bake
Place the baklava in the preheated oven and bake for about 45-50 minutes, or until golden brown and crisp.
Make Honey Syrup

Prepare Syrup
While the baklava is baking, combine granulated sugar, water, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let it cool.
Finish Baklava

Pour Syrup
Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup over the hot baklava. Let it soak for several hours or overnight before serving.
Serve

Garnish and Serve
Serve the baklava warm or at room temperature with a scoop of pistachio ice cream on the side.
