Lamb Preparation

Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for roasting the rack of lamb.

Season the Lamb
Rub the rack of lamb with olive oil, then season generously with salt and black pepper. Optionally, mince garlic cloves and rub them onto the lamb for added flavor.

Sear the Lamb
In a hot skillet over medium-high heat, sear the rack of lamb on all sides until browned, about 2-3 minutes per side. This helps to lock in the juices.

Roast the Lamb
Transfer the lamb to a roasting pan and place it in the preheated oven. Roast for about 20-25 minutes for medium-rare or until the internal temperature reaches 135°F (57°C).

Rest the Lamb
Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

Prepare the Red Pepper
Char the red bell pepper over an open flame or under a broiler until the skin is blackened. Place in a bowl, cover with plastic wrap, and let it steam for about 10 minutes. Peel off the skin and remove the seeds.

Chop Ingredients
Finely chop the roasted red pepper, fresh parsley, and garlic clove. Combine in a bowl.

Stir in the lemon zest, olive oil, and salt. Mix well to create a fresh gremolata.

Zest the lemon and orange, then cut them in half. Squeeze the juice from both fruits into a small bowl, discarding any seeds.
