Lamb Preparation

Prepping the Rack
Preheat your oven to 200°C (400°F). Trim excess fat from the rack of lamb, if necessary.

Marinating
In a small bowl, mix minced garlic, chopped rosemary, olive oil, salt, and black pepper. Rub this mixture all over the lamb, ensuring it's evenly coated. Let it marinate for at least 30 minutes at room temperature.
Cooking the Lamb

Searing
In an oven-proof skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the rack of lamb, fat side down, and sear for about 3-4 minutes until browned. Flip and sear for another 3-4 minutes.

Roasting
Transfer the skillet to the preheated oven and roast for 15-20 minutes for medium-rare, or longer if desired. Use a meat thermometer to check for an internal temperature of 60°C (140°F).

Resting
Remove the lamb from the oven and cover it loosely with foil. Let it rest for 10 minutes before slicing.

Cooking Baby Potatoes
While the lamb is resting, boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

Plating
Slice the rack of lamb between the bones into chops. Serve alongside the baby potatoes and asparagus. Enjoy your Australian Rack of Lamb!
