Burrata and Salad

Method
Preparing the Tomato Salad

Chop the Tomatoes
Wash the cherry tomatoes and cut them in half. Place them in a mixing bowl.

Add Seasoning
Drizzle with extra virgin olive oil and balsamic vinegar. Season with salt and freshly ground black pepper to taste. Toss gently to combine.

Incorporate Basil
Tear the fresh basil leaves and add them to the tomato mixture. Toss again and set aside.
Making the Basil Oil

Blend the Basil
In a blender, combine 1 cup of fresh basil leaves, 0.5 cup of extra virgin olive oil, and a pinch of salt.

Blend Until Smooth
Blend on high speed until the mixture is smooth and vibrant green. Adjust salt to taste.

Strain the Oil
If desired, strain the basil oil through a fine mesh sieve to remove the solid bits for a smoother texture.
Serving the Dish

Plate the Burrata
Place the 4 oz of Burrata Di Puglia in the center of a serving plate.

Add Tomato Salad
Spoon the prepared tomato salad around the burrata.

Drizzle with Basil Oil
Generously drizzle the basil oil over the burrata and tomato salad.
