Prepare and marinate chicken
Pound the chicken breasts to an even thickness (about 1/2 inch) or slice horizontally to make two thin cutlets. In a small bowl, mix 1 tablespoon olive oil, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp smoked paprika. Rub the mixture evenly onto both sides of the chicken. Let rest at room temperature for 10 minutes (or refrigerate up to 2 hours).

Grill the chicken
Preheat a grill or grill pan to medium-high heat (about 400°F/200°C). Lightly oil the grill grates or brush the pan with remaining olive oil. Grill the chicken cutlets 3–5 minutes per side, until internal temperature reaches 165°F (74°C) and grill marks form. Remove from heat and let rest 3–5 minutes, then slice thinly across the grain.

Assemble the sandwich
Spread about 1–2 tablespoons of chipotle ranch on the bottom half of each toasted roll. Layer sliced grilled chicken evenly, then place Monterey Jack slices on top of the hot chicken so they soften. Add 3 pieces of bacon per sandwich (or more to taste). Top with shredded lettuce and 3–4 tomato slices. Spread additional chipotle ranch on the top half of the roll if desired, close the sandwich, press gently, and cut in half.

In a small bowl, whisk together 1/4 cup mayonnaise, 1/4 cup sour cream, and 2 tablespoons buttermilk until smooth. Stir in 1 teaspoon finely chopped chipotle pepper (start with less if you prefer milder heat), 1 teaspoon fresh lime juice, 1/2 teaspoon dried dill, 1/2 teaspoon dried parsley, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Taste and adjust seasoning or chipotle level. Refrigerate at least 15 minutes for flavors to meld. Yields about 3/4 cup — enough for two sandwiches with extra for serving.
