Method

Fresh Vegetables Preparation

Prepare Carrots

Wash and peel the carrots. Cut them into thin sticks.

Wash the radishes and cut them in half or quarters, depending on size.

Wash and slice the cucumbers into rounds.

Wash the bell peppers, remove seeds, and cut into strips.

Wash and halve the cherry tomatoes.

Pickled Vegetables Preparation

Prepare Pickling Liquid

In a pot, combine water, vinegar, and pickling spice. Bring to a boil.

Pickle Vegetables

Add the cauliflower florets and red onion slices to the boiling mixture. Boil for 3-5 minutes.

Remove from heat and let cool. Once cooled, transfer to a jar and refrigerate for at least 24 hours.

In a bowl, combine mixed olives, olive oil, lemon zest, and fresh thyme.
