Prepare the Oysters
Carefully shuck the fresh oysters using an oyster knife. Hold the oyster in a towel with the hinge facing you. Insert the knife into the hinge and twist to open the shell, then slide the knife along the top shell to detach the muscle.

Arrange the Oysters
Place the shucked oysters on a bed of crushed ice on a serving platter to keep them chilled and presentable.

Prepare the Horseradish
Grate fresh horseradish using a fine grater until you have about 2 tablespoons. Place it in a small serving bowl.

Serve the Mignonette
If you have a rotating mignonette, prepare to serve it alongside the oysters. You can make a simple mignonette by combining red wine vinegar, finely chopped shallots, and black pepper in a bowl.

Slice the Lemon
Cut the lemon into wedges and arrange them on the platter with the oysters. This will allow guests to squeeze fresh lemon juice onto their oysters if desired.
