Clean the Oysters
Rinse the oysters under cold running water to remove any sand and debris. Use a scrub brush if necessary to clean the shells.

Shuck the Oysters
Using an oyster knife, carefully insert the blade into the hinge of each oyster. Twist the knife to pop open the shell, then slide the knife along the top shell to sever the muscle. Remove the top shell and set aside. Make sure the oyster remains intact in the bottom shell.

Prepare the Mignonette Sauce
In a small bowl, combine the red wine vinegar and finely chopped shallots. Let it sit for at least 10 minutes to allow the flavors to meld. Add a pinch of sea salt and freshly cracked black pepper to taste.

Serve the Oysters
Arrange the shucked oysters on a platter. Serve with prepared horseradish, mignonette sauce, and lemon wedges on the side for drizzling. Enjoy immediately.
