Prepare the Pizza Dough

Preheat your oven to 220°C (425°F). Prepare the pizza dough according to your favorite recipe or use a store-bought version. If using store-bought dough, make sure it’s at room temperature before rolling it out.

Cook the Sausage

In a skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it apart with a spatula. Cook for about 5-7 minutes or until browned and cooked through. Season with salt and pepper. Remove from heat and set aside.

Prepare the Kale

In the same skillet, add the chopped kale and sauté for about 2-3 minutes until slightly wilted. Add a pinch of salt and pepper to taste. Remove from heat.

Roll Out the Dough

On a floured surface, roll out the pizza dough into a circle about 12 inches in diameter. Transfer the rolled dough to a pizza stone or a baking sheet sprinkled with cornmeal to prevent sticking.

Assemble the Pizza

Spread the cooked sausage evenly over the dough. Next, add the sautéed kale on top of the sausage. Finally, sprinkle the shredded mozzarella cheese evenly over the toppings. Finish with a dusting of red chili flakes to taste.

Bake the Pizza

Place the pizza in the preheated oven and bake for about 12-15 minutes or until the crust is golden and the cheese is melted and bubbly.

Slice and Serve

Once baked, remove the pizza from the oven and let it cool for a few minutes. Slice into wedges and serve hot.
