    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove bacon from the pot and crumble it, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot, add butter, onion, and celery. Sauté until onions are translucent.

    Add Potatoes and Clam Juice

    Add the diced potatoes and clam juice to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

    Add Cream and Milk

    Stir in the heavy cream, milk, chopped clams, thyme, salt, and black pepper. Heat through but do not boil.

    Serve

    Ladle chowder into bowls, garnish with crumbled bacon and parsley, and serve hot.
