    Melt Chocolate

    Chop the dark chocolate into small pieces and melt it gently in a heatproof bowl over a pot of simmering water (double boiler). Stir until smooth and remove from heat. Let it cool slightly.

    Separate Eggs

    Separate the egg yolks from the egg whites. Place the yolks in a large mixing bowl and the whites in a separate clean bowl.

    Mix Egg Yolks and Sugar

    Add granulated sugar to the egg yolks and whisk until the mixture is pale and fluffy. Gradually add the melted chocolate and vanilla extract, mixing until well combined.

    Whip Egg Whites

    Add a pinch of salt to the egg whites and whip them using an electric mixer until stiff peaks form.

    Fold Egg Whites

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip Cream

    In a separate bowl, whip the heavy cream until soft peaks form.

    Combine Cream

    Gently fold the whipped cream into the chocolate mixture until no white streaks remain.

    Chill

    Divide the mousse into serving dishes and refrigerate for at least 3 hours, or until set.

    Serve chilled, topped with additional whipped cream if desired.
