    Take the picanha steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Generously rub the kosher salt and black pepper all over the steak. Make sure to cover all sides.

Optional Marinade

    Make the Marinade

    If using the optional marinade, combine minced garlic, chopped rosemary, and lemon juice in a bowl. Mix well.

    Marinate the Steak

    Place the seasoned steak in the marinade and let it sit for at least 1 hour or up to overnight in the refrigerator for the best flavor.

Cooking

    Preheat your grill to a medium-high heat (around 400°F or 200°C). If using charcoal, ensure the coals are glowing and covered in ash.
