Caramel Preparation

Make the Caramel
In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar dissolves completely.

Cook the Caramel
Allow the mixture to boil without stirring. Continue to boil until the sugar turns a golden amber color, about 10-15 minutes. Watch carefully to prevent burning.

Pour the Caramel
Immediately pour the caramel into a round flan mold or individual ramekins, swirling to coat the bottom evenly. Set aside to cool and harden.
Custard Preparation

Blend Ingredients
In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt until smooth and well combined.

Pour Custard into Mold
Carefully pour the custard mixture over the hardened caramel in the flan mold or ramekins.
Baking the Flan

Prepare Water Bath
Preheat the oven to 350°F (175°C). Place the flan mold or ramekins in a larger baking dish and fill the dish with hot water halfway up the sides of the molds.

Bake the Flan
Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

Cool and Chill
Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
Serving

Unmold the Flan
To serve, run a knife around the edge of the flan to loosen it. Invert onto a serving plate and let the caramel sauce drizzle over the top.
