Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to prepare for baking the cakes.
- 2
Prepare Ramekins
Grease four 6-ounce ramekins with butter and dust with cocoa powder or flour to prevent sticking. Place them on a baking sheet.
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a medium saucepan over low heat, combine the unsweetened chocolate and unsalted butter. Stir until melted and smooth. Remove from heat and let cool slightly.
- 4
Mix Sugar and Eggs
In a mixing bowl, whisk together the granulated sugar, whole eggs, and egg yolks until well combined and slightly thickened.
- 5
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, whisking continuously until smooth. Stir in the vanilla extract and a pinch of salt.
- 6
Add Flour
Gently fold in the all-purpose flour until just combined, being careful not to overmix.
Baking the Cakes
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look set but slightly wobbly.
Serving
- 9
Cool and Unmold
Remove the baking sheet from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges of each ramekin and invert onto plates.
- 10
Serve
Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream on the side.
