Beef Tartare Preparation

Prepare the Beef
Finely chop the beef tenderloin using a sharp knife. Aim for a mince-like consistency but avoid grinding to maintain texture.

Mix Ingredients
In a mixing bowl, combine the chopped beef tenderloin with capers, finely chopped shallot, and chopped fresh parsley.

Season the Mixture
Add Worcestershire sauce, hot sauce, salt, and black pepper to the beef mixture. Mix thoroughly until well combined.

Make Mustard Mayo
In a small bowl, mix together the mayonnaise and Dijon mustard until smooth and well blended.
Assembly

Plate the Tartare
Spoon the beef tartare mixture onto a serving plate, forming a small mound.

Make a small indentation in the center of the tartare mound and carefully place the egg yolk on top.
