Preparation

    Prepare the Marinade

    In a large bowl, combine minced garlic, olive oil, red wine vinegar, paprika, oregano, salt, black pepper, and chili powder. Mix well until all ingredients are fully integrated.

    Marinate the Ribs

    Place the beef ribs in a large dish or resealable plastic bag. Pour the marinade over the ribs ensuring they are well coated. Cover the dish or seal the bag and refrigerate for at least 4 hours, preferably overnight.

Grilling

    Preheat the Grill

    Preheat your grill to a medium-high heat, about 200-230°C (400-450°F). If using charcoal, prepare the coals until they are ashy.

    Grill the Ribs

    Remove the ribs from the marinade and let excess liquid drip off. Place the ribs on the grill bone-side down. Grill for approximately 15-20 minutes per side, or until they reach your desired doneness, turning occasionally to prevent burning.

    Rest the Ribs

    Once the ribs are cooked through, remove them from the grill and let them rest for about 10 minutes before serving. This allows the juices to redistribute.

Serving

    Plate and Garnish

    Slice the beef ribs between the bones and arrange them on a serving platter. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
