Prep
Remove eggs from the refrigerator so they come closer to room temperature (about 10 minutes). Rinse potatoes and pat dry. Dice potatoes into 1/2-inch cubes. Peel and finely chop the yellow onion. Halve cherry tomatoes. Pit and slice the avocado, then toss slices with a pinch of salt and a squeeze of lemon if available. Shred the cheddar cheese if not pre-shredded. Chop parsley if using.

Crispy Breakfast Potatoes
Heat 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add diced potatoes in a single layer and let brown undisturbed for 4 minutes. Add 1/2 tablespoon butter, chopped onion, smoked paprika and garlic powder, and a pinch of salt and pepper; stir to combine. Continue to cook, stirring occasionally, about 10-12 minutes, until potatoes are golden and tender. Taste and adjust seasoning. Transfer potatoes to a warm plate and keep covered.

Bacon & Sausage
In the same skillet (wipe out excess oil if it burned), lay bacon slices in a cold skillet and cook over medium heat until crisp, turning occasionally (8–12 minutes). Drain on paper towels. Meanwhile, in a separate medium skillet over medium heat, cook sausage links with 1 teaspoon of water, turning occasionally until browned and cooked through, about 8–10 minutes. Keep both warm.

Scrambled Eggs with Spinach & Cheese
Crack eggs into a bowl, add 1 tablespoon whole milk, 1/2 teaspoon salt and 1/4 teaspoon black pepper; whisk until combined and slightly frothy. Warm a clean 10-inch nonstick skillet over medium-low and add 1 tablespoon butter. When butter is melted and foamy, add baby spinach and sauté 30–45 seconds until wilted. Pour eggs over the spinach. Let eggs set at the edges for 10–15 seconds, then gently stir with a spatula, folding from edges to center. Cook slowly, removing from heat while still slightly soft (carryover will finish). Sprinkle shredded cheddar over eggs, fold once, and transfer to plate.

Toast & Avocado
Brush both sides of bread slices lightly with remaining butter. Toast in a skillet or grill pan over medium heat until golden and crisp, about 2 minutes per side. Slice avocado and fan on top of toast or smash with a fork and season with a pinch of salt and pepper. If desired, top with chopped parsley and a squeeze of lemon.
