Cook sausage
Heat a large nonstick skillet over medium-high heat. Add the ground breakfast sausage (or diced bacon/ham) and cook, breaking up with a spatula, until browned and cooked through, about 6–8 minutes. If using bacon, cook until crisp then drain excess fat leaving about 1 tablespoon.

Sauté aromatics
Push the cooked meat to the side of the pan or remove briefly and add 1 tablespoon olive oil if needed. Add the diced onion, bell pepper, and minced jalapeño (if using). Sauté over medium heat until softened and translucent, about 4–5 minutes.

Season filling
Stir the vegetables together with the meat. Sprinkle in the ground cumin, smoked paprika, and 1/2 tsp salt. Cook for another 1–2 minutes to bloom the spices. Remove the pan from the heat and transfer the filling to a bowl; set aside while you make the eggs.

Whisk eggs
In a medium bowl whisk together 8 large eggs, 1/4 cup milk, 1 tsp salt, and 1/2 tsp black pepper until frothy and uniform in color.

Scramble eggs
Wipe the skillet used for the filling clean or use a separate nonstick skillet. Add 2 tablespoons butter or oil and heat over medium. Pour in the egg mixture. Let sit undisturbed for 10–15 seconds, then gently stir with a spatula, scraping the pan bottom and folding eggs until soft curds form and eggs are just set but still moist, about 3–5 minutes. Remove from heat.

Warm tortillas
Warm the flour tortillas to make them pliable: microwave stacked with a damp paper towel for 20–30 seconds, or warm one at a time in a dry skillet over medium heat for 15–20 seconds per side.

Portion fillings
Lay a warm tortilla on a flat surface. Spoon about 1/4 of the scrambled eggs into the center, then top with about 1/4 of the meat & veggie mixture (≈3 oz sausage+veggies). Add 3–4 tablespoons shredded cheddar, a tablespoon of sour cream, about 2 tablespoons salsa, and any optional add-ins you like (about 2 tablespoons diced tomatoes, 2 tablespoons black beans, and/or 1/4 avocado). Sprinkle with 1/2 tablespoon chopped cilantro and hot sauce if desired.

Fold burrito
Fold the sides of the tortilla inward over the filling, then roll from one end tightly to enclose the filling, tucking as you go to form a neat burrito. Repeat for remaining tortillas and filling.

Serve immediately with extra salsa, sour cream, cilantro, and hot sauce on the side.
Optional Add-ins

If using black beans, warm them briefly in a small saucepan or microwave and drain any excess liquid before adding to burrito. For avocado, slice or dice just before assembling to prevent browning. Fold add-ins into the burrito along with the other fillings.
