    Form patties

    Divide the ground beef into four evenly weighted portions (about 5 oz / 140 g each). Gently form each portion into a loose ball and then flatten into 3/4"–1" thick patties slightly larger than the buns. Do not overwork the meat. Season both sides of each patty with kosher salt and freshly ground black pepper.

    Preheat griddle or skillet

    Heat a heavy cast-iron griddle or large skillet over medium-high heat until very hot, about 5 minutes. Add the vegetable oil and spread to coat the surface.

    Cook patties

    Place the patties on the hot griddle leaving space between them. Cook undisturbed 3–4 minutes until a deep brown crust forms on the bottom. Flip once and cook 2–3 minutes on the second side for medium; if you want well-done, cook an additional 1–2 minutes. In the last 1 minute of cooking, top each patty with a slice of sharp cheddar cheese (use two slices per burger total: 1 cheddar slice on each patty). If using American cheese for extra melt, add it on top of the bottom patty after the flip so each burger ends with two cheese layers.

Toppings & Assembly

    Cook bacon

    While the patties cook, place bacon in a cold skillet and cook over medium heat, turning occasionally, until crisp and browned, about 8–10 minutes. Transfer to a paper-towel-lined plate to drain. For double bacon coverage, use three slices per burger and break or fold as needed to layer onto each assembled sandwich.

    Toast buns

    Spread the softened butter evenly on cut sides of the buns. Toast the buns, buttered side down, on the griddle or in a skillet over medium heat until golden and crisp, about 1–2 minutes.

    Prepare onion & pickles

    Slice the red onion thinly into rings or half-rings. Keep pickle slices ready.

    Assemble burgers

    Spread 2 tablespoons of BBQ sauce onto the bottom half of each toasted bun. Place one cheesy patty on the sauced bottom bun, add a layer of 3 crispy bacon slices, then place the second cheesy patty on top. Add 1 tablespoon ranch dressing to the top bun, then a few red onion slices and 4 dill pickle slices. Close the sandwich and press gently. Repeat for the second burger.

    Cut in half if desired and serve immediately while hot with an extra ramekin of BBQ sauce or ranch for dipping.
