Trim and slice
Trim excess fat from the chicken breasts. Pat dry with paper towels. Slice each breast into 1/2-inch thick cutlets, then cut each cutlet into star shapes using a small star cookie cutter (about 1.5–2 inches across). If you don't have a cutter, freehand cut star shapes with a small knife.

Marinate
In a bowl, whisk together Greek yogurt, lime juice, olive oil, minced garlic, ground cumin, smoked paprika, kosher salt, and black pepper. Add the star-shaped chicken pieces, toss to coat thoroughly, cover, and refrigerate for at least 30 minutes and up to 3 hours. The yogurt will tenderize and flavor the chicken.

Set up breading stations
Prepare three shallow dishes: (1) combine flour and cornstarch; (2) whisk together egg and milk until smooth; (3) mix breadcrumbs, grated Parmesan (if using), dried oregano, and 1/2 tsp salt. Remove marinated chicken from fridge and let come briefly toward room temperature while you heat oil or preheat the oven.

Coat the stars
One piece at a time: shake excess marinade off the chicken star, dredge first in the flour mixture (lightly coat and shake off excess), dip into the egg wash, then press into the breadcrumb mixture to fully coat. Place coated stars on a wire rack set over a baking sheet. Repeat until all pieces are coated.

Cook - shallow fry (recommended for crispness)
Heat 2–3 tbsp vegetable oil in a large nonstick or cast-iron skillet over medium heat (oil should shimmer but not smoke). Add chicken stars in a single layer without crowding (work in batches). Cook 2–3 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer cooked pieces to a paper-towel-lined plate to drain briefly.

Bake (alternative, lighter)
Preheat oven to 425°F (220°C). Lightly oil a baking sheet or line with parchment. Arrange the coated chicken stars in a single layer and spray the tops lightly with cooking spray or brush with remaining oil. Bake 10–12 minutes, flip once halfway through, until golden and internal temperature hits 165°F (74°C). For extra crispness, broil 1–2 minutes at the end while watching closely.
