    Clean the Mussels

    Rinse the fresh mussels under cold running water, scrubbing the shells to remove any dirt or barnacles. Remove any beards (the fibrous strands) that are attached to the mussels.

    Mince the Garlic

    Peel and finely mince the garlic cloves. Set aside.

    Chop the Parsley

    Finely chop the fresh parsley and set aside.

Cooking

    Heat the Oil

    In a large pot or deep skillet, heat the olive oil over medium heat until it shimmers.

    Sauté the Garlic

    Add the minced garlic to the pot, stirring constantly for about 1-2 minutes until fragrant but not browned.

    Add the Mussels

    Carefully add the cleaned mussels to the pot, stirring to coat them in the garlic oil.

    Pour the white wine over the mussels and add the salt and black pepper. Cover the pot with a lid.

    Allow the mussels to steam for about 5-7 minutes, or until they have opened up. Discard any mussels that remain closed.
