Preparation of Clams

    Clean the Clams

    Rinse the clams under cold water to remove any sand or debris. Soak them in fresh water for about 30 minutes to help expel any remaining sand.

    Steam the Clams

    In a large pot, add a cup of water and bring to a boil. Add the clams, cover, and steam for about 5-7 minutes until they open. Discard any clams that do not open.

Cooking the Chowder

    Sauté Vegetables

    In a large pot over medium heat, melt the butter. Add the chopped onions and celery, and sauté until they are softened, about 5 minutes.

    Add Potatoes and Clam Juice

    Stir in the diced potatoes, clam juice, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the potatoes are tender.

    Combine Clams and Cream

    Remove the clams from their shells and chop them roughly. Add the chopped clams, heavy cream, and milk to the pot. Stir well and simmer for another 5 minutes.

Serving the Chowder

    Remove the bay leaves from the chowder. Ladle the chowder into bowls and garnish with chopped parsley and bacon bits. Serve hot.
