Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Cook the Pancetta
In a large skillet over medium heat, cook the pancetta until it's crispy, about 5-7 minutes. Remove from heat and set aside, leaving the rendered fat in the skillet.

Prepare the Egg Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine the Ingredients
Add the hot drained spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the pasta, and toss vigorously to combine. The heat from the pasta will cook the eggs gently. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

Season and Serve
Taste and add salt if necessary. Serve immediately with extra Parmesan cheese and freshly cracked black pepper on top.
