Pasta

Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring 4 liters of salted water to a boil.

  2. 2

    Cook the Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain the Pasta

Once cooked, reserve 1 cup of pasta water, then drain the spaghetti in a colander.

Making the Tomato Sauce

  1. 4

    Heat the Oil

In a large skillet over medium heat, add the olive oil and allow it to heat for about 1 minute.

  2. 5

    Sauté the Garlic

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, but do not let it brown.

  3. 6

    Add the Tomatoes

Pour in the canned whole tomatoes, crushing them gently with a wooden spoon.

  4. 7

    Season the Sauce

Add salt, black pepper, and sugar to the sauce. Stir well and let it simmer for about 15-20 minutes, allowing it to thicken.

  5. 8

    Stir in the Basil

Once the sauce has thickened, stir in the fresh basil leaves and remove from heat.

Combining and Serving

  1. 9

    Combine Pasta and Sauce

Add the drained spaghetti to the skillet with the tomato sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.

  2. 10

    Plate the Dish

Serve the spaghetti al pomodoro on plates, garnished with grated Parmesan cheese and additional basil leaves.
