Method

For the Seared Salmon

1

Prepare the Salmon

Pat the salmon fillets dry with a paper towel. This helps to get a nice sear.

2

Season the Salmon

Season both sides of the salmon fillets with salt and black pepper.

3

Heat the Oil

In a non-stick skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

4

Sear the Salmon

Place the salmon fillets skin-side down in the hot skillet. Cook for 4-5 minutes without moving them, until the skin is crispy and browned.

5

Flip and Finish Cooking

Carefully flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through but still moist.

6

Add Lemon

Squeeze fresh lemon juice over the salmon just before serving for added flavor.

For the Seasonal Vegetables

7

Prepare the Vegetables

Wash and slice the zucchini and bell pepper into thin strips. Trim the asparagus ends.

8

Sauté Garlic

In another skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

9

Cook the Vegetables

Add the zucchini, bell pepper, and asparagus to the skillet. Season with salt and black pepper.

10

Sauté Until Tender

Cook the vegetables for about 5-7 minutes, stirring occasionally, until they are tender but still crisp.

11

Serve

Remove the vegetables from heat and serve alongside the seared salmon.
