Grill the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with salt, black pepper, and a tablespoon of olive oil. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes, then slice into strips.

Prepare the Sauce
In a medium saucepan, heat the remaining tablespoon of olive oil over medium heat. Pour in the tomato sauce and let it simmer for about 5-7 minutes, stirring occasionally. Add salt and black pepper to taste.

Combine Ingredients
In a large baking dish, spread a thin layer of the tomato sauce on the bottom. Layer the sliced grilled chicken over the sauce, followed by the fresh spinach. Sprinkle the mozzarella cheese evenly over the spinach, and then crumble the goat cheese on top.

Preheat the oven to 375°F (190°C). Bake the assembled dish in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbling.
