For the Grilled Salmon

    Prepare the Salmon

    Preheat your grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt, black pepper, and lemon juice.

    Grill the Salmon

    Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes, then flip and grill for an additional 4-6 minutes or until the salmon is cooked through and flakes easily with a fork.

For the Chive Lemon Oil Dressing

    Make the Dressing

    In a small bowl, combine finely chopped chives, olive oil, lemon juice, salt, and black pepper. Whisk until well combined.

For the Salad

    In a mixing bowl, combine arugula and sliced tomatoes. Drizzle with the chive lemon oil dressing and toss gently to combine.

For the Piadina Bread

    Heat the piadina bread on the grill for about 1-2 minutes on each side or until warm and slightly crispy.
