Prepare the Broccoli Rabe
Wash the broccoli rabe thoroughly under cold water. Trim the ends and cut them into 2-inch pieces.

Mince the Garlic
Peel and finely mince the garlic cloves. Set aside.

Prepare the Sausage
Remove the casing from the Italian sausage and break it into small pieces.
Cooking

Cook the Pasta
Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté the Sausage
In a large skillet, heat the extra virgin olive oil over medium heat. Add the sausage pieces and cook until browned and cooked through, about 5-7 minutes. Stir occasionally to break up the sausage.

Combine Pasta and Sauce
Add the drained orecchiette to the skillet. Toss everything together, adding some reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.

Serve the orecchiette alla Barese hot, drizzled with additional extra virgin olive oil if desired.
