Method

Preparation of Branzino

  1. 1

    Prep the Fish

Clean the branzino by removing the scales and gutting it if necessary. Rinse under cold water and pat dry with paper towels.

  2. 2

    Marinate the Fish

Drizzle the branzino with 2 tablespoons of olive oil, sprinkle with salt and black pepper, and stuff the cavity with parsley and lemon slices. Let it marinate for at least 20 minutes.

Preparation of Roasted Potatoes

  1. 3

    Prepare the Potatoes

Preheat the oven to 400°F (200°C). Wash the baby potatoes and cut them in half.

  2. 4

    Season the Potatoes

In a mixing bowl, toss the halved potatoes with olive oil, minced garlic, rosemary, salt, and black pepper until evenly coated.

  3. 5

    Roast the Potatoes

Spread the seasoned potatoes on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until golden and tender.

Preparation of Asparagus

  1. 6

    Prep the Asparagus

Trim the woody ends off the asparagus and rinse under cold water.

  2. 7

    Season the Asparagus

In a mixing bowl, toss the asparagus with olive oil, salt, and black pepper until well coated.

  3. 8

    Grill the Asparagus

Grill the asparagus on medium heat for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Grilling the Branzino

  1. 9

    Preheat the Grill

Preheat the grill to medium-high heat.

  2. 10

    Grill the Fish

Place the marinated branzino on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
