Method
Fried Calamari
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Mix the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
Soak in Buttermilk
Place the calamari rings in another bowl and cover them with buttermilk. Let them soak for at least 30 minutes.
Heat the Oil
In a deep pot or fryer, heat vegetable oil to 375°F (190°C).
Coat and Fry
Remove calamari from buttermilk, letting excess drip off. Dredge in the flour mixture until fully coated. Fry in batches for 2-3 minutes until golden brown. Remove and drain on paper towels.
Meatballs
Combine Ingredients
In a large bowl, mix together ground beef, ground pork, breadcrumbs, grated Parmesan cheese, minced garlic, egg, chopped parsley, salt, and black pepper until well combined.
Form Meatballs
Shape the mixture into small meatballs, about 1 inch in diameter.
Serve
Serve warm with marinara sauce or your choice of dipping sauce.
Assorted Pizzas
Prepare the Dough
Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface to your desired thickness.
Bake the Pizza
Transfer the pizza to a baking sheet or a pizza stone and bake for 12-15 minutes or until the crust is golden and the cheese is bubbling.
Garnish and Serve
Remove from the oven, garnish with fresh basil leaves, slice, and serve.
