Calamari Preparation

Clean and Cut the Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

Soak in Buttermilk
Place the calamari rings in a bowl and pour over the buttermilk. Let them soak for at least 30 minutes to tenderize.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper. Mix well until evenly combined.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk and allow excess to drip off. Dredge each piece in the breading mixture until well-coated.

Carefully add the coated calamari to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
