Fried Artichokes

Prepare the Artichokes
If using fresh artichokes, trim them, remove the tough outer leaves, and cut them into quarters. If using canned artichokes, drain and pat dry.

Make the Batter
In a bowl, combine flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well. In another bowl, whisk together eggs and milk until smooth. Gradually add the dry ingredients to the wet ingredients, mixing until you have a smooth batter.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Fry the Artichokes
Dip each artichoke piece into the batter, allowing excess to drip off. Carefully place them in the hot oil. Fry in batches for about 3-4 minutes or until golden brown, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Serve the fried artichokes hot with ranch dipping sauce.
Ranch Dipping Sauce

Combine Ingredients
In a mixing bowl, combine mayonnaise, sour cream, dried dill, garlic powder, onion powder, salt, black pepper, and lemon juice.

Mix Well
Stir all the ingredients together until well combined and smooth.

Chill
Cover and refrigerate the ranch dipping sauce for at least 30 minutes to allow the flavors to meld.

Serve the ranch dipping sauce alongside the fried artichokes.
