Cooking Pasta

Boil Water
In a large pot, bring water to a boil and add 1 teaspoon of salt.

Cook Fettuccine
Add the fettuccine pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, drain the pasta in a colander and reserve about 1 cup of the pasta water.
Making Truffle Sauce

Sauté Shallots and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced shallots and sauté for about 2 minutes until translucent. Then, add the minced garlic and cook for an additional 1 minute until fragrant.

Prepare Sauce
Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the truffle oil, grated Parmesan cheese, salt, and black pepper. Allow the sauce to simmer for about 3-5 minutes, stirring occasionally until thickened.
Combining Pasta and Sauce

Combine Pasta and Sauce
Add the drained fettuccine to the skillet with the truffle sauce. Toss gently to coat the pasta with the sauce, adding reserved pasta water a little at a time if the sauce is too thick.
Serving

Garnish and Serve
Divide the fettuccine tartufo onto plates. Garnish with chopped fresh parsley and a drizzle of extra truffle oil if desired. Serve immediately.
